…SO, about a year and a half ago I had this strange nostalgia for this bizarre thing my mother (who hated & still hates to cook) would make for dinner sometimes when I was a kid. Ah yes, Tuna Goop!
Eventually the nostalgia turned to an intense craving, so I phoned my mother to get her “recipe” (which was probably just from the inside of a Campbell Soup can label.) Once my mother was over her shock of my desire to actually eat this, and had finished laughing enough so that I could attain her recipe, I basically realized that I would need to do some very key alterations.
- Problema numero uno: my mother’s version called for cream of mushroom soup
I HATE mushrooms, they taste like squishy dirty. Worse actually. & don’t even think about trying to convince me otherwise, the only mushroom I like to eat is a truffle.
So I revamped this to my liking as follows:
-1 large can of tuna in water
(or if you want to step it up you can use fresh tuna steaks: pan, oven, or grill! to cook & then flake meat. I recommend seasoning with lemon, salt, pepper, & a touch of olive oil.)
- wide egg noodles (Manischewitz Yolk Free Noodle Style Pasta Extra Wide) (they’re kosher & delicious! & yes I know, egg noodles that are egg free… novel)
-sour cream (if you don’t like sour cream, you can use milk, but it won’t have the same taste or texture)
-cheddar cheese or a mixture of cheddar & mozzarella, shredded
-fresh spinach leaves
-avocado
-cherry tomatoes
-yellow bell pepper (red is good too)
-salt & pepper to taste
-Bring water to a boil and add pasta. Heat the canned or place the cooked tuna in a large skillet, season, add a glop of sour cream (seriously, whatever feels right) and ~ 2 handfuls of shredded cheese (again go with what feels good). Stir.
-When pasta is just past al dente, drain & add to the skillet. Stir.
-While pasta-tuna mixture is simmering and basically becoming all goop-y & delicious, slice bell pepper, cut cherry tomatoes in half, and slice the avocado dusting it with salt.
-Spoon Tuna Goop onto a bed of fresh spinach and garnish with bell pepper, tomatoes, and avocado. enjoy. discard all old recipes of Tuna Goop. smile.
